Spicy Bean Salsa
Ingredients:
• 10 grams red kidney beans (soaked overnight and boiled)
• 10 grams black beans (soaked overnight and boiled)
• 10 grams whole kernel corn (drained)
• 10 grams green peas
• ½ cup chopped capsicum
• ½ cup chopped bell pepper (yellow and red)
• ½ cup diced jalapeno peppers
• ½ cup diced olives (black)
• 1 cup chopped tomatoes
• 1 cup Italian style salad dressing (or salsa sauce)
• Salt to taste
Preparation:
In a medium bowl, combine black beans, red kidney beans, corn, peas, green bell pepper, jalapeno peppers and tomatoes. Season with salt and Italian style salad dressing or salsa sauce. Mix well. Cover and keep aside for 1 hour to blend flavors.
